Pasta is a versatile, fast, and easy way to tame hunger, which makes it a favorite meal for many. Traditional Pesto sauce is absolutely delicious but comes with lots of fat calories from both olive oil and Parmesan cheese (or vegan Parmesan for us vegans). While it is hard to resist a great spaghetti, it doesn’t have to come with those unhealthy attributes. The BHV version is made of whole wheat pasta with no use of either oil or cheese, close enough to the familiar taste without unnecessary calories from reined oil and cheese. Sprinkle with some nutritional yeast for a cheesier flavor!
Ingredients:
Whole Wheat Spaghetti - 6oz
Basil leaves, fresh - 12oz
Garlic cloves, raw - 4
Pine nuts, raw - 6tbsp
Filtered water - 1/2cup
Lemon juice - 2tbsp
Optional: Nutritional Yeast Flakes - 2tbsp
Optional - grape tomato halves
Black pepper (ground) - to taste
Directions:
Bring a large pot of water to a boil. Cook linguini, stirring occasionally until cooked through but firm to the bite (al-dente), refer to the packaging for the recommended time as it varies. Drain and transfer to a pasta bowl.
In the meantime wash basil leaves, add them to a blender bowl. Add pine nuts, garlic cloves, ground black pepper, water, and lemon juice and blend for about a minute
Add sauce to the pasta and gently mix with a fork
Optional: Garnish with grape tomatoes and nutritional yeast
