Guilt-free, gluten-free cake with only whole ingredients. Enjoy a large piece of your dessert under 300 kcal and get 7gr of protein! You will need a tube pan, but the process itself is fast and easy

Ingredients:

Medium ripe bananas - 3

Rolled oats - 2 1/2 cups

Brown coconut sugar (or demerara) - 1/2 cup

Peanut butter - 1/4 cup

Ground flaxseed - 2 tbsp

Water - 4 tbsp

Baking powder - 1 tsp

Baking soda - 1 tsp

Salt (Celtic grey or Himalayan pink preferred) - 1/4 tsp

Vanilla extract - 1 tsp

Apple cider vinegar - 2 tsp

Dark chocolate, vegan (nutrition calculated with 88% cacao) - 1/2 bar, chopped

Directions:

  1. Preheat the oven to 360F or 180C. Grease a standard tube pan and set it aside

  2. In a blender (you can use a food processor too), mill the rolled oats until it looks like flour, set aside

  3. Place the flour in a large bowl, add baking powder, baking soda, and salt. Mix and set aside

  4. Add bananas, flaxseed flour, water, sugar, peanut butter, and vanilla extract to the oat flour in the blender. Mix until smooth and homogeneous

  5. Add the liquid mixture to the blender. Mix well. Add the apple cider vinegar and mix again, until smooth and homogeneous

  6. Crush the chocolate bar with a kitchen knife into small pieces, add to the dough and mix. You can leave some to decorate the top of the cake

  7. Pour the dough in the previously greased tube pan and distribute evenly

  8. Bake the cake until for about an hour. When it’s ready the top is brown
